Ghoulish Green Pea Soup

Temps are dipping, leaves are falling, and many of us are contemplating our costume choices and watching spooky movies. Make this easy and oh so satisfying soup for dinner one night this week and your friends, family, and tummy will thank you!

2 cups dried split peas, organic

68 cups of water

45 teaspoons of vegan ham flavored dry broth base*

6 carrots, organic

1/2 red onion, organic

34 cloves of garlic, organic

3/4 cup frozen meatless sausage style crumbles

*NOTES:

One of my favorite brands of dry seasoning mixes is Orrington Farms Broth Base & Seasoning. They make vegan flavors including ham, chicken, and beef.

Meatless sausage style crumbles are available in many grocery stores these days. I used Wegman’s “Don’t Be Piggy” store brand. It’s affordable and very tasty.

Instructions

  • Add split peas and water to a large (3-4 quart) stock pot.
  • Bring to a boil and stir in the ham flavored broth base, starting with 4 teaspoons and adding more to taste.
  • Lower the heat and simmer for 20 minutes.
  • While peas simmer, peel carrots and slice into rounds.
  • Peel and chop onion.
  • Peel garlic cloves and slice off ends.
  • Add carrots to split peas after 20 minutes of simmering and continue to simmer while sauteing the onions, garlic, and crumbles.
  • In a medium skillet heat olive oil and sauté the onion for 2-3 minutes over medium low heat.
  • Press the cloves of garlic into the pan.
  • Add frozen crumbles to skillet.
  • Cook for 5-6 minutes, then add to split pea mixture.
  • Continue to simmer the split pea soup over low heat, adding more water – 1/4 cup at a time – if consistency is too thick.
